This Junmai Daiginjo took over 1 months to make, using 50% polishined Yamadanishiki made in Nagasaki prefecture. Elegant acidity with crisp and dry taste. The aroma spreads in the mouth gradually, it has mild and delicious taste as well. Cherry blossom flower kobo yeast is used.
